Irish Cream Fudge
Ingredients
2 pkg. (12 oz. each) milk chocolate chips
1 pkg. (12 oz.) semisweet chocolate chips
2 jars (7 oz. each) marshmallow cream
2 tsp. vanilla extract
2/3 cups Irish Cream
2 cups chopped nuts, optional
4-1/2 cups granulated sugar
1 can (12 oz.) evaporated milk
1/2 lb. butter or margarine
Directions:
In a very large bowl, combine 2 pkg. milk chocolate chips, 1 pkg. of semisweet chocolate chips, marshmallow cream, vanilla extract, Irish Cream and nuts, if using. Set aside. Line a 10x15" pan with foil and spread lightly with butter or margarine. In a medium saucepan, combine granulated sugar, evaporated milk and butter. Bring to a gentle boil over medium heat and cook slowly, stirring constantly about 10 minutes. Pour milk mixture into very large bowl holding chocolate chip mixture. Stir slowly by hand to combine. It is very important to do this by hand, not using a mixer. Pour fudge into prepared pan and chill until set. Cut into 1x2" pieces.
